  2. Tamagoyaki is one of the definitive test skills of a Japanese cook. It’s all about the quality of ingredients, the right timing and amount of heat… the less unnecessary movements, the perfect color and shaping, the purity of flavor. His technique and execution is nothing short of incredible. No hesitation. His tamagoyaki is one of the most beautiful and enticing I’ve ever seen. All his other dishes are expertly crafted to perfection as well. But what makes him so special isn’t only his food, it’s his customers. He makes the absolute best for simple, working class people, not rich gourmet patrons. His eatery is modest but full of warmth and heart, he clearly cares for and loves his customers, and undoubtedly this love is mutual. So young and skilled but so wholesome. THIS is what cooking is all about. So young, but already a master, with crystal clear directions for his own life. Brilliant!
