In today’s video, Shizuka indulges in an intimate dining experience. Kappo dining, meaning “to cut and cook”, is a style of cuisine that focuses on the connection between the chef and the diner. Kappo restaurants are usually set up to be counter-style with an open kitchen, so guests can watch the chef prepare each part of the meal. While cozy, these restaurants tend to be relatively exclusive and known mostly through word of mouth.

Kappo dining also emphasizes the use of seasonal ingredients and usually offers only a set course menu. At Shinsen Kappo Sanoya, Shizuka enjoys a meticulously prepared meal and conversation with chef Sano Masayuki. From soy sauce foam to a whole snapping turtle, this Japanese course meal is a whole culinary adventure.

  1. We may not have seen everything but I didn't notice him add any cream or egg to the dessert so I'm inclined to say that was a sorbet . Either way that dessert was probably my favorite looking dish of the whole course

  9. I'm sorry but that turtle soup looked gross and if it tasted fishy it meant he gave you old turtle (young turtle does not taste like that).

    Shizuka dyed (or is that highlight?) her hair! I almost did not recognize her in the first few frames! Very refreshing!
