RAW FOOD TOUR IN SENDAI

1. KOTORA RESTAURANT: Yuke + Beef Sashimi
ADDRESS: Miyagi-ken, Chuo 1-1-1, Aoba-ku, Sendai-shi, Miyagiken

🇯🇵 YUKE (Minced Beef): Cut the wagyu into small pieces then mince them. Put them in the bowl. Second, add home-made sauce, sesame oil and a mix of vinegar and miso in the bowl and stir them well. Next, place the combination on a plate and top up with an egg yolk. Finally garnish with cucumber, green onion and sesame seeds on top of the egg, shiso flower on a side.

🇯🇵 BEEF SASHIMI: Cut wagyu into small thin pieces. Lubricate the gloves with sesame oil to shape the cooked rice. Put wasabi on top of the beef slices. Top up the rice with beef. Finally, add soy sauce on the beef slices and put beef sashimi on a plate that already garnished with a shiso leaf.

2. NANBU IZAKAYA: Shark Heart
ADDRESS: Blue Ribbon Building Basement Floor – 2-417 Ichibancho, Aoba-ku, Sendai-shi, Miyagi, Japan

🇯🇵 SHARK HEART: Wash & clean the shark heart carefully. Next, prepare a plate and add Japanese hot radish and oba leaf on the plate. After that, slice the shark heart and put those slices on the plate. Chop up the shark valves and put them next to the heart slices on the dish. Serve it with salt sesame oil mixture and garlic

3. 2ND GENERATION NIDAIME: Basashi + Torisashi
ADDRESS: 150-0001 Tokyo, Shibuya city, Jingumae, 1 chrome 2, Japan

🇯🇵 Basashi (raw horse meat): Prepare a round plate decorated with blue glass paper. Then, cut the meat into small pieces and put them on the plate. Add hot pepper and garlic miso paste on it. Finally add some kujo onion from Kyoto on the dish and serve with soy sauce.

🇯🇵 Torisashi (chicken sashimi): Clean and slice the chicken. Place slices on a plate in a flower shape. Add kuju in the middle of the dish, wasabi and karashi (mustard) on a side. Finally serve it with soy sauce.
