My name is Gianni from Rome, Italy This is my restaurant in Tokyo, Japan This is my life in Japan This is Gianni, 57 years old, an Italian who works as the owner of this ramen restaurant named Ippachitei. This restaurant was established in 1984 and celebrates its 40th anniversary this year.

Originally, the restaurant was opened by the father of his wife, Tomoe. Gianni and Tomoe met in Thailand. Twenty years ago, Tomoe was studying abroad in Thailand when Gianni, who was traveling there, fell in love with her at first sight.

When Tomoe returned to Japan, Gianni followed her and they started dating. A year later, in 2005, the two were married. After moving to Japan, Gianni bagan helping out at his wife’s ramen restaurant. Now, he has created numerous original menu items that fuse Japanese ramen with Italian flavors.

For example, “Rome Mazesoba” with Italian cheese and prosciutto, and “Genovese Ramen” rich with basil. With these original menus, the restaurant has become a favorite of many Japanese people. Today, we will show you a day in the lives of Gianni and Tomoe, at this restaurant.

His morning begins with preparing the ramen noodles and broth. This restaurant is operated on a shift system by you and your wife, isn’t it? Yes, I am on shift until 8 o’clock PM. After that, my wife will run the restaurant until 4 in the morning.

Do they have time to spend together as a couple? Not really. We only go out together on our regular day off, which is Monday. Do you ever feel lonely? I’ve gotten used to it. Of course, there are times when I wish we could be together more, but it can’t be helped.

What kind of flour do you use for the noodles? We use flour that is specifically for making ramen. We also mix in semolina, which is often used for pasta. We are currently making thick noodles, but the ingredients are different for thin noodles.

For thin noodles, we use whole wheat flour, so as you can see, it’s completely different. My wife searched for the flour that would be best suited for the fusion of ramen and Italian flavors. At that time, I couldn’t speak Japanese at all, so my wife worked hard on it.

How long does the process of making noodles take? This process takes about 20 minutes. We repeat the same process five times. We make the thick noodles every day. We make thin noodles every other day. How do you differentiate between using thick noodles and thin noodles?

We use thick noodles for miso ramen and soupless noodles. We use thin noodles for soy sauce-based menu items Why did you decide to take over this restaurant? I came to Japan in 2004, so this year marks exactly 20 years

When I first came to Japan, I was working as a waiter at an Italian restaurant. After work, I would always eat dinner here, enjoying my wife’s homemade cooking at this restaurant That’s why I was always observing the work at this restaurant On the other day, the Chinese staff decided to return to China

My wife asked if I could work for him instead. I answered “Maybe yes” For the next month, my wife and the Chinese staff taught me everything they knew. Just one month. The day after he returned home, I ran the restaurant by myself. My Japanese wasn’t great then.
