Hi, I’m Atsuko, and today we’re going to eat some local Japanese ramen together! There are various kinds of delicious ramen in Japan and I can’t wait to share them with you! Sapporo’s Miso Ramen Miso Ramen is believed to have originated in Sapporo’s Aji no Sanpei in 1955.

You can enjoy the same flavor in Tokyo at this restaurant, Ezo Giku, established in 1968. There is no ticket machine at Ezogiku, so you order directly from the waiter. They also have spicy miso ramen! There is also a variety of spices to choose from!

Miso Ramen 900 yen (≒$5.93) I added butter and corn for 100 yen each (≒$0.66) The miso soup is very rich! The best way to enjoy this soup is by melting some butter into it Butter and corn toppings are the most popular when eating Sapporo Miso Ramen!

The ramen has many vegetables so it’s hard to find the noodles! Where are the noodles? ?? There they are! The noodles are medium thick and frizzy. The flavor of the soup is well absorbed into the noodles 👍‼! Let’s add some spicy miso! Looks delicious! Thank you for the delicious ramen!

Hakodate Shio(salt) Ramen This is Ogikubo station, Ogikubo is also called the holy land of ramen because there are many ramen shops serving delicious ramen here! The restaurant we are about to visit has been selected as one of the 100 best ramen restaurants on the Tabe-log (review site), and is very popular!

First, you need to buy a meal ticket and then give the ticket to the waiter. It is said that salt ramen was first served at “Yowaken” in Hakodate in 1884. Ramen 850 yen (≒$5.6) plus 150 yen (≒$1) for kombu (kelp) toppings

Shoyu ramen is said to have originated in 1910 at “Rairaiken” in Asakusa. The Rairaiken here in Yuutenji is a restaurant opened by the head chef of the Asakusa Rairaiken who went independent. The ramen at the top of the menu is the Shoyu Ramen, which is said to be the origin of ramen!

There are many Yokohama Iekei Ramen restaurants in Tokyo. But the place we are going to now is a direct descendant of Yoshimuraya, which is said to be the birthplace of Yokohama Iekei-Ramen! After purchasing a meal ticket, wait in a queue. I bought a standard ramen for 800 yen (≒$5.28).

However, it was prohibited to take a picture inside the restaurant. Yokohama Iekei Ramen is characterized by thick pork bone soup and thick noodles. This is the first time in my life that I am eating Tokushima ramen. Tokushima ramen is characterized by a deep brown broth made from tonkotsu (pork bone) soup with dark soy sauce added.

It is said that tonkotsu ramen spread in Tokushima because there was a ham factory and a large supply of cheap tonkotsu was available! First, buy a meal ticket! This is “Kaeshi” (sauce for ramen). This is “sudachi”, a citrus juice mainly found in Shikoku.

Ta-da! This is the first Tokushima Ramen in my life! 950yen (≒$6.27) The soup is thick, sweet, and salty! It’s so good! It tastes like sukiyaki! The medium-thin noodles are chewy and go well with the rich soup! The ingredients are sweet and spicy pork, bamboo shoots, bean sprouts, and green onions.

The special feature of Tokushima ramen is the raw egg. 50 yen (≒$0.33) There is a description of how to enjoy the raw egg. The raw egg can be put in the soup, or used as a dipping sauce for the pork. Let’s see, yes, it is exactly like sukiyaki.

It seems that the soup becomes mild if you add the raw egg. The thick soup became very mild! I’ll put some sudachi in it too. Yes, the taste has changed to a refreshing one. It is also delicious! Thank you for the great ramen! It was tasty! Hakata Ramen in Fukuoka

Speaking of Hakata ramen, Ichiran is famous, but there are long queues at every store due to its popularity. So I went to the Higashiyamato branch, a less crowded one in Tokyo.

The good thing about Ichiran is that you can adjust the hardness of the noodles and the thickness of the flavor to your liking in detail on the order form. I ordered ramen for 980 yen (≒$6.47) and egg for 140 yen (≒$0.92)!

This red sauce is very spicy if you eat it as it is, so please dissolve it in the soup before eating! Hakata Ramen is characterized by thin noodles and thick pork bone soup. The soup is rich and very tasty. It goes well with thin noodles. Ichiran’s Chashu pork is always warmed before serving!

Hakata Ramen is served with a smaller amount of noodles than other ramen, so if you need more, ask for a “Kae-dama”! “kaedama” means another bowl of noodles! I decided to ask for half the amount of kaedama. 150 yen (≒$1)

Also, the “Kae-dama” is slightly flavored so that the soup does not become too thin! It is also enjoyable to ask for different noodle hardness for the”Kae-dama”! So good! Thank you for the delicious ramen! Don’t forget to visit the unique restroom at Ichiran! Kumamoto Ramen

Kumamoto is located in Kyushu, the same as Fukuoka, but their ramen is a little different! First, buy a meal ticket! This is a famous Kumamoto Ramen restaurant, Keika. Let’s buy a meal ticket first! I ordered the Katsura Ramen (≒$5.41). What toppings should I order? Let’s go with an egg! 120 yen (≒$0.79)

Keika’s tea is pu-erh tea, which is said to have a fat-reducing effect! That’s thoughtful! Paper aprons are available when you ask the staff! Unlike Hakata Ramen, Kumamoto Ramen contains not only pork bones but also chicken broth, which makes the soup milder. The noodles are thicker, and the burnt garlic is very appetizing!

Another characteristic of Kumamoto Ramen is the “Ma-yu”! Ma-yu is a spicy oil made by frying garlic and other spicy vegetables in lard. Please try it! It is very tasty!     I wish i could try ブラックラーメン this one in particular looks very special🧐. その中でどれが一番好きですか ? Also i was wondering i know ramen often have rich soups with meat but is it common to find vegetarian ramen outside of local specialties ? I've been vegetarian for 10 years and i'm afraid the day i go to Japan i'm gonna have to make that end because meals with meat or fish look too delicious😅

    While I LOVE pork broth, The Hokkaido miso ramen had me almost drooling! This is something that if I can't find here, I may have to go to an Asian market and buy the ingredients myself! I HAVE to try this!
