Another great video. Good quality, editing and production. Also just got back from Japan again myself. What a great country. Some things to check out are Uniqlo (heattech) and don quijote for the thing you didn't know you needed. Nail clippers are good. And yes, Egg Sando's are gods gift to westerners.

Tony raised a right ruckus when one Lawson's was out of egg salad sammies on a hot day, so he sent his hapless lackey assistant cinematographer to another Lawson's a bit on down the road.
Weird fact, true story:
I ran into Tony here in Seattle.
He called me The Michelin Man Mafia because I was wearing a longish obnoxiously orange puffer coat, with my customary Fedora hat and a surly expression on my face.
I was exiting a Target store when I looked up and there was Tony Bourdain smiling at me.
I heard that he loved the look I gave him which I hope wasn't to "bugger off!"
I remain a huge fan of the Chappie, by the way.

おにぎりは包装に書かれてる数字の順番に剥いて行くとご飯に海苔が巻かれた状態で完成する様になっていてとても考えられた包装になっています。お寿司は海沿い関係なく安い物であればスーパーに売ってますし回転寿司と言うファストフード的な寿司専門店もたくさんありますが寿司職人が握るちゃんとした寿司店の寿司はレベルが違うので少しでも高級なお寿司を次回機会があれば食べてみて下さい。

You would follow the 3 steps to unwrap the onigiri rice ball. It’s easy once you try it. The seaweed wrap is kept separate in order to keep it crispy.
Btw, I think the reason you didn’t notice much sushi could be because you were visiting the conbini often. There are so many places that sell sushi all over Japan. For a good variety of foods, I suggest going to a izakaya.

The creme brulee ice cream is one of my favourite conbini treats. I find it best to let it get a bit melty before breaking the sugar crust. My other favourites are the butter/syrup filled pancakes and the various cream puffs.

As a Japanese local, it was really heartwarming and enjoyable to watch foreign travelers easily enjoying Japanese food like this!
You might get a lot of comments pointing out how you opened the onigiri, but since you managed to wrap the seaweed around it perfectly in the end, it’s absolutely no problem! Honestly, even for us Japanese people, when we carefully follow the proper instructions to peel off the plastic wrapper, 10 to 20% of the seaweed inevitably tears off and gets stuck inside anyway.
Also, as a Japanese person, my absolute top recommendation for a monaka ice cream is Morinaga's "Choco Monaka Jumbo". It has a perfectly thin layer of chocolate sandwiched between the wafer and the ice cream, as well as right in the center. The aroma and sweetness of the chocolate, combined with that signature cold, crispy crunch, make for the best accent! It’s been a massive long-seller since 1972 and you can easily find it at most convenience stores, so please definitely look out for it.
As you discovered, there is a staggering number of convenience stores (konbini) in Japan, led by the top three major chains. In the past, Japanese people actually viewed them as overpriced and low quality. However, through years of continuous "KAIZEN" (improvement), they have transformed into places that offer the highly original and satisfyingly high-quality foods you enjoyed. While they are still a bit pricier than other options, the quality definitely justifies it. They are incredibly useful, especially for office workers and students with limited lunch breaks, or for people living alone who aren't great at cooking.
Having said that, for the average Japanese person, local supermarkets are the go-to places. They offer a much wider variety of fresher, less processed foods at a much better value. You can find very affordable, high-quality sushi in the deli or fresh seafood sections of these supermarkets. So, after your convenience store adventures, I highly recommend visiting a local supermarket next time!
Regarding your thoughts on sushi restaurants, you're right that there might be relatively fewer of them in tourist areas located far from major inland cities. Thanks to highly advanced logistics in modern Japan, it's easy to get fresh raw fish anywhere. Still, you are definitely more likely to see a lot of sushi restaurants in areas famous for their fishing industry (like Hokkaido) or in high-demand urban centers like Tokyo and Osaka.
