This was at Kitan Hibiki in Dotonbori.
The tartare is made using freshly hand-sliced Wagyu, not minced. That difference in preparation keeps the texture intact and lets the natural flavor of the beef come through clearly.
Simple, clean, and focused on the quality of the Wagyu.
