Takoyaki たこ焼き is a popular Japanese street food that originated in Osaka. These delicious octopus balls are made from a batter of flour, eggs, and dashi (a Japanese stock), filled with pieces of octopus, tempura scraps, pickled ginger, and green onions. The batter is poured into a special takoyaki pan, which has round molds. The cook then places a piece of octopus in each mold and turns the balls continuously to ensure they cook evenly.

Here’s a simple recipe to make takoyaki at home:

Ingredients:
2 cups takoyaki flour (or a mixture of all-purpose flour and cake flour)
4 cups dashi stock
4 large eggs
1 1/2 cups chopped cooked octopus
1 cup tempura scraps (tenkasu)
1/4 cup chopped pickled ginger
1/4 cup chopped green onions
Takoyaki sauce
Mayonnaise
Aonori (seaweed flakes)
Bonito flakes
Instructions:
Prepare the Batter:

In a large bowl, whisk together takoyaki flour and dashi stock until smooth.
Beat the eggs in a separate bowl and add them to the flour mixture, whisking continuously.
Cooking Takoyaki:

Preheat your takoyaki pan over medium heat and brush each mold with oil.
Pour the batter into each mold until nearly full.
Add a piece of octopus, tempura scraps, pickled ginger, and green onions to each mold.
Allow the edges to cook slightly and then use a skewer or chopsticks to start turning the takoyaki balls.
Forming Balls:

Continue turning the balls until they are golden brown and crispy on the outside, but still soft on the inside.
The balls should be round, so keep turning them to shape them in the molds.
Serve:

Transfer the takoyaki to a plate and drizzle with takoyaki sauce and mayonnaise.
Sprinkle with aonori and bonito flakes.
Enjoy:

Serve immediately while they are hot and enjoy the deliciousness of homemade takoyaki!
