  7. I love how all the running tap water in Japan is basically free. You won't see any blood or dirt in the kitchen as the water is like waterfall rinsing all the places to keep kitchen clean.

  8. I have seen a lot of fish being frozen to paralyze them before being filleted, but I have never seen them being shocked to paralyze. This is the first time I have seen the fish prepared this way. This seem like a fast and easy way, I wonder why not all cooks use this method.

  9. First time seeing people eat carps raw. I love specialty restaurant like this. They have few dishes, but done really well. And the service is awesome! The guy is so friendly

  10. So.. this is specific fish raised in cleanest water to avoid odors smell and parasites not a normal farming fish. The way they prepare fish is so fast and clean so you can eat it raw. What a fascinating restaurant.

  11. Japanese people are generally picky when it comes to their fish cuisines and the fact that this restaurant managed to make Carp Sashimi a bestselling dish means that the people running their establishment are highly skilled. So amazing!👏

  15. Filament grilling is still good, but nothing beats that charcoal aroma… especially with that sauce touching up the charcoal… the smokey flavour also gets into the final product…

  16. 鯉料理は、真水で泥はきを一週間以上させないと、とても食べれるもんじゃありません。だから川魚や鰻は高価になります。

  17. So respectable….food looks great. Truly amazing how much time, thought and dedication of these hard working people. I love it… it would be a pure pleasure of being able to dine in such remarkable place. Right now all i have seen is on video, but next time im out eating i will think of all the hearty labourer that serves me some of their best dishes. Thank you!

  19. やっぱり福岡はクオリティー高いな。鯉料理の裏側まで知れてちゃんと 今まで敬遠していたけど、衛生管理のもと育てて調理すれば最高のものができるんだな。近所にこんな店あったらなー。うらやましい。
