Olive wagyu has been called the rarest steak in the world. At over $500 a pound, it’s one of the most expensive meats you can buy. In Shōdoshima, Japan, Masaki Ishii creates olive wagyu by feeding his cattle the waste from local olive groves. An olive-wagyu cow is worth 1.2 million yen, or over $9,000. So, what makes olive wagyu different from other varieties of wagyu? And what makes it so much more expensive?

    1lb of steak sells for 500 dollars.
    A cow weighs a lot more than 18lbs!

  9. We need more people like Masaki who genuinely cares about the cattle and environment, and shows that you can still make a good profit using methods that recycles waste.

  10. So the cows get 250 gram of olive bi-product a day for 2 month. I’m failing to see where we’re supposed to justify the price jump. So why is olive Wagyu so expensive? Because it’s a marketing strategy giving the elusion that the cows are actually fed olives, real olives, as a diet. Nope. They get 250 g ( that’s like 2 cups) of an olive byproduct ( otherwise trashed garbage) for two months. Which means the real diet is normal cow feed . It’s amazing how the public is willing to put any product on a pedestal and justify the price so long as it’s Japanese.

  13. Olive + crushing = olive oil and pomace. Olive pomace already contains less oleic acid by virtue of it being stripped of the oils. Pomace is then dried in sunlight. Oleic acid is photosensitive and is prone to oxidization (The same reason why good quality olive oil is in amber bottles). Minimal quantities of oleic acid are then oxidized and degraded due to sunlight exposure. How does this minimal and degraded form of oleic acid enhance the oleic acid content in the actual beef?
