Ultra clear shio and shoyu ramen at Yatagarasu near Kudanshita station



Yatagarasu (八咫烏) serves ultra refined chicken broth based shio and shoyu ramen and has been consistently among the top 100 highest rated ramen places of Tokyo according to Tabelog. So I had to grab Cody from Ramenguidejapan.com along for the ride and get myself one of their bowls near Kudanshita station, slightly to the North of central Tokyo.

The bowls at Yatagarasu are the typical modern and trendy highly refined ramen style characterized by basically just using water and chicken, focusing really on drawing out the chicken flavor and putting it in the foreground. The shio bowl and ramen bowl are very differently put together. The shio ramen bowl which is highlighted in this video is very mild and subdued, which lets you concentrate on the refined chicken flavor. The aroma oil is a very mild olive oil. On the other hand, the shoyu ramen bowl is an aromatic punch in the face. Very fragrant chiyu chicken oil floats on top of the bowl, which is flavored with a shoyu tare which allegedly also includes various types of alcohol. Honestly, we did not taste that in the shop, it was excellent nonetheless.
