Last month we got a rare look into the local farming industry of Tsuruoka City by lodging in a farmers home called Naa out in the rice fields of Yamagata Prefecture.
We then woke up before sunrise and joined them as they harvested dadachame soybeans, some of the most famous produce from this region. These soybeans have a rich a uniquely savory flavor and rich aroma that makes them a prized ingredient across Japan.
Following our harvest out in the fields we took the dadachamame back to the farmers home where we cooked them together and later enjoyed a delicious breakfast together.

I've been to Japan 5 times but I've never visited this area. Next time I'd love to stay at a farm house for a few days.
Great description of the depth of taste for the dadachame because we don't get much of a chance to experience the nuances of flavour.
I went to Tsuruoka-Shi in November of 2019, it was so surreal and It felt great to experience the more hidden side of japan!! :,)
