Challenge Shizuka is back with Japan’s most difficult omelet: the Kichi Kichi Omurice from Za Yoshokuya Kichikichi (ザ 洋食屋 キチキチ) in Kyoto. Chef Motokichi Yukimura, all-around happy person and inventor of the Kichi Kichi Omurice shows Shizuka how it’s done, before putting her skills to the test.
Chef Motokichi’s Kichi Kichi Omurice is made with chicken, shimeji mushrooms, chopped onion, soybeans, butter, rice, and demi-glace sauce; and topped with the gooiest omelet and a sprinkling of dried parsley. The toughest part about making Japan’s most difficult omurice is getting the texture of the omelet right. It should be just barely cooked on the outside, so the center is still gooey and moist, and when it unfolds over the bed of fried rice it’s more akin to a sauce than an omelet.

I was in Kyoto in 2019. I wish I knew about this restaurant. I went to a restaurant in Nishiki Market and had omurice for the first time. Loved it! Too bad the Japanese restaurants in the States only serve sushi, teriyaki, and ramen.
Besides from his flashy side I’ve seen what he go through everyday working on sauces before store opens.
