Koyu brings an intimate Japanese restaurant beneath another modern Japanese establishment, Okaru, in Roslyn, offering a chef-led sushi tasting experience in a 12-seat dining room.
The restaurant’s menu features a number of rotating courses that change nightly, beginning with small plates and seasonal seafood before progressing to Edomae-style nigiri, hand rolls and dessert. Dishes may include A5 Wagyu beef and caviar served in a crisp nori shell, Japanese tilefish and a warm egg custard with king crab and mushrooms. Executive sushi chef Bryan Yee sources nearly all of the restaurant’s fish from Japan, while the menu incorporates locally sourced ingredients.
Koyu is the second restaurant from Northern & Main Hospitality, founded by chef Marc Spitzer, a longtime chef and partner at Manhattan’s BondST, and real estate investor Noam Shemel.

The Cipher Room
The Cipher Room brings a craft-cocktail lounge and spirits-tasting experience to downtown Smithtown, drawing inspiration from Long Island’s Revolutionary War-era espionage history and the Culper Spy Ring.
The drink menu features inventive cocktails made with spirits from Spy Trail Distillery, including the Hidden in Plum Sight, made with gin, plum-infused dry vermouth, umeshu, nocino and lemon, and the Golden Veil Extraction, which combines honey bourbon, rum, herbal liqueur and banana and saffron flavors. The bar also serves flights of its vodka, gin and bourbon, including honey bourbon and black tea bourbon, in addition to small plates including charcuterie, pretzel bites, popcorn chicken, meatballs and crispy smashed potatoes.
The Cipher Room was opened by Robyn and Mark Grindel, owners of Ronkonkoma-based Spy Trail Distillery, which produces small-batch spirits inspired by Long Island’s history.
