Today I’m going behind the counter at one of Tokyo’s last remaining traditional yatai ramen carts, hidden in the streets of Shibuya. While Japan is famous for its ramen restaurants and street food culture, these nostalgic Japanese food stalls have almost completely disappeared from Tokyo. Yatai, meaning food cart in Japanese, dates back to the Edo period when street vendors sold noodles late into the night. As food safety regulations tightened and street permits became increasingly difficult to obtain, these traditional ramen carts slowly vanished. But one young Japanese ramen chef is determined to bring this disappearing food culture back to life. Originally from Gero, Gifu Prefecture, he spent four years running his own yatai before moving to Tokyo to pursue his dream. Despite countless challenges securing permission to operate in Shibuya, he refused to give up. His family has operated a noodle factory in Japan for over 100 years, but instead of following in his father’s footsteps, he chose to create his own path. In this Japan food documentary, I’m following his daily routine, from preparing ramen in a licensed kitchen to serving customers on the streets of Shibuya, preserving a piece of traditional Japanese food culture.

  1. Ouch that wound! I could not just go on lol. And it's probably not good to just go on. At least put a bandage or something on it!

  2. His first goal should be to make the Yatai Shop self-sustaining and to increase its visibility. To do that, he needs a social media presence and something special to attract customers. I don't see either of those yet. Dedication alone won't be enough.

  3. Oof I felt that.. 😯 pushing that cart already looked difficult enough but stuff falling of and hurting you doesn't help. This is one tough guy! Gambare! 💪

  4. what a bright, ambitious and inspiring young man. wish him nothing but the best in his future, because work ethic is one of the most important ingredients to success.

  5. Thank you very much Paolo for showing us this wonderful Yatai ramen cart. I admire this young man and his motivation and courage. Personally, I dont like Shibuya, but I would like to go there on my next trip to Japan, to eat ramen in his stall.

  6. Is there a social media to follow? I'll be back in Japan mid January. It's in the middle of winter, I would love to visit if it's open.

  7. I Drank Orion when i was stationed in Okinawa in 1982 . it used to have a sleight taste of onions then. I would thin by now you would not be able to tell anymore.

  8. I wish him every success in life❤ he seems extremely dedicated and focused. Hopefully one day I get a chance to go to Japan and I can try some of his food ! 🍜

  9. one of my favourite things to watch on youtube are the Yatai's in Fukuoka! the food always looks so good, im hoping to go there in a few weeks when im in Japan, I cant wait!!!!

  10. he's a very hardworker and has a vision. it's clear he's just starting and figuring out what works for the Business. BEST OF LUCK GANBATE!

  11. 4:13 he says something that sounds like yebiga or jebiga in serbian which would describe the situation perfectly in our language.. LIke jebiga it happened, show must go on .

  12. Personally, I would really want to go. I did go toTokyo, but I was stupid and did not did research with my sister went with me

  13. I don’t comment much but seeing someone work so hard and have such a positive outlook on life is super inspiring. Although his family has a factory he still works hard in his own crafts to prove himself and make them proud.

I hope to see his business thrive and will definitely visit him next time im in Tokyo!

  14. Thanks for featuring him @PaolofromTOKYO !!! Will definitely look for him when in Tokyo again. Wishing him all the best ❤

  16. Honestly those noodles look fabulous!!! Thin, long, firm but still chewy… I’m going to have to drop by next time I’m in the city. Thank you for showcasing this yatai! 😁
