A sushi restaurant with a uniquely rotating daily menu has debuted at DC Ranch. Nestled into far North Scottsdale’s most enviable shopping and dining district at Pima Road and Thompson Peak Parkway, Tomu-san Sushi is a restaurant concept from the iconic Kaufman Hospitality Group that also created The Living Room, CHoP, The Peacock and Elvira restaurants.
The aesthetic for Tomu-san is open, elegant, inviting and punctuated with touches of warm woods and bamboo. Don’t miss the patio dining opportunity that puts you in a curbside area that is slightly recessed, yet still allows you to see and be seen. The patio’s glass-topped natural wood tables are gorgeous, showcasing imported wood that is a conversation starter all by itself.
The service at Tomu-san ties together Japanese tradition, the honor of spending time with family and friends over a quality meal, and the opportunity to enjoy an ever-changing menu that delivers quality and culinary engagement every time a new dish or beverage is presented at the table. Executive chef at Tomu-san, Christopher George, has orchestrated a menu fit for connoisseurs of sushi and Japanese cuisine.

Before embarking on a Tomu-san culinary journey, guests enjoy the tradition of oshibori, a damp, warm towel used for cleaning hands before a meal, and a time-honored tradition of hospitality. Also, take note of the way the quality chopsticks are placed on the plates. Thoughtful and proper touches of Japanese culture and tradition are present throughout Tomu-san.
The sake, wine, beer, and cocktail menus feature meticulously curated selections that appeal to a variety of guests. A collection of rare Japanese whiskies is a welcome treat for those in the know of the spirit.
One standout on the sake menu is Wildflowers, a pure rice sake that imparts a light, smooth, and slightly fruity flavor, pairing wonderfully with all kinds of sashimi and sushi rolls.
The Koi cocktail is a light and refreshing drink that incorporates Awayuki strawberry gin, Italicus, lemon, rose water and a subtle kiss of lychee fruit. The result is a perfectly balanced cocktail that dazzles the taste buds and complements the delicate flavors of fish to a T.
Starters can rotate with the rest of the menu, but don’t miss the Szechuan bbq spare ribs that are cooked to an impossibly tender perfection and glazed to an exquisitely warm and slightly sticky hickory Mongolian bbq nirvana, then sprinkled with sesame seeds and green onions.
The TFK roll features exceptional Miyazaki Wagyu beef striploin, tender lobster and petite panko-crusted asparagus, served with a sesame miso accompaniment. It is different than a traditional sushi roll, as it combines a variety of textures, flavors and the highest quality lobster and Wagyu. The TFK roll is easily the restaurant’s most popular sushi roll, and it was created by the founder of Kaufman Hospitality Group, Thomas Kaufman.
The hamachi kama, aka yellowtail collar, is a prized portion from the neck that is a rich, tender, and fatty portion that is grilled to flaky perfection. Hamachi kama is always in high demand and short supply. Be sure to ask upon arrival at Tomu-san if yellowtail collar is available that day.
Crispy rock shrimp tempura is the perfect dish to enjoy yourself, or enjoy as an appetizer among friends. The tasty dish includes a crunchy and tangy shrimp with beech mushrooms, shishito peppers and a toasted Malaysian curry aioli. This dish is typically a menu mainstay.
Finally, enjoy a happy ending to a dining experience at Tomu-san with one of their desserts. Choose from yuzu cheesecake with a raspberry coulis, a macadamia nut tart with vanilla bean ice cream and caramel, or the corn flake fried ice cream with caramel and chocolate sauce.
Enjoy the traditions and culinary excellence of Japan at Tomu-san Sushi in DC Ranch in North Scottsdale. Private events are also available for groups of 11 or more. Visit tomusansushi.com for additional information.
