We’re going behind the scenes in Japan’s Kyoto City Central Wholesale Market to experience what a day at a Japanese fish market and fish auction is really like. This Japan food documentary follows Marufuku Suisan, a family run seafood wholesaler led by a second and third generation mother and daughter team. Founded in 1927, Kyoto’s market is the oldest central wholesale market in Japan, opening even before Tokyo’s famous Tsukiji Market and playing a major role in Japan’s food culture. Chisa grew up in the market, watching her mother and grandfather build the family business. Today, she works as a nakagai nin, a licensed seafood wholesaler responsible for purchasing fresh fish at auction and supplying restaurants and businesses throughout Kyoto. Every morning begins by inspecting the day’s catch before contacting customers to understand exactly what they need and how much they are willing to pay. Success at a Japanese fish market is about far more than winning bids. Chisa san carefully studies market conditions, recommends the best seafood available, and builds long term relationships through trust and reliability, values she learned from her mother. This is a rare look inside one of Japan’s oldest wholesale markets, revealing the people, traditions, and craftsmanship that keep Japanese cuisine and Kyoto’s food culture thriving every single day.
