Craving a delicious local meal the moment you arrive in Niigata? In this video, we head straight to Niigata Station’s CoCoLo Niigata EAST SIDE (2F) and try Ramen Ittouya—an iconic Niigata ramen shop that first opened in 2004. It’s known for custom thick noodles and a bowl you can only taste in Niigata—and even a rich tsukemen unique to Ittouya.
I ordered their signature “Kasane Shoyu.” “Kasane” means “layered,” and the taste really lives up to the name: a rich double soup that combines pork-bone depth with seafood umami. The bowl is crowned with a flame-seared chashu that stretches across the top, plus thick-cut bamboo shoots (menma) that deliver an incredible bite.
Follow the quick walk from the Shinkansen East Gate to the station’s ramen street, then enjoy the close-up food shots and my honest reaction to that first sip. Whether you’re here for sightseeing, business, or a fast transfer, this is a perfect “first meal in Niigata.” The shop is open 11:00–23:00 (last order 22:30).
