One of Austin’s most acclaimed dining destinations is making its Washington debut. Uchi, the celebrated Japanese restaurant from James Beard Award-winning chef Tyson Cole and Hai Hospitality, officially opens in DC on May 12 at 1700 M St. NW.
Known for its refined yet approachable take on Japanese cuisine, Uchi has built a national following through its inventive menu of sushi, sashimi, tempura, hot and cold tastings, and immersive omakase offerings. The new DC outpost marks the brand’s first entry into the region, bringing its signature blend of traditional technique and unexpected global influences to the city’s dining scene.
Leading the kitchen is Chef de Cuisine Rob Drennan, whose background includes roles with Rose’s Restaurant Group in Washington, DC, as well as experience at acclaimed restaurants in both Oslo and Austin. Guests can also expect Uchi’s highly regarded hospitality approach, designed to create a personalized dining experience at every seat in the house.
