Ramen but with reduced labor costs, hence the popularity.
I only discovered mazesoba in recent times. I was skeptical at first but its very good. There’s a place I go to in Sydney called Kokoro that serves it. Highly recommended if any Sydney residents are here.
Ive not eaten it in Japan yet but planning another trip atm.
