
I thought it was salt cured but those tend to be more shriveled. These look plump and he seems to be separating them from the white out of the bowl. It looks really good but idk what type of preparation that is.

I think those are just good quality raw chicken eggs? The way he’s separating them is skilful for sure.
These folks seem like they are cured somehow. Fresh yolks don’t bounce like that.
I think they’re just regular Japanese chicken eggs. When I was visiting, it seemed like all the eggs there were orange, due to the chickens’ quality diets.
They’re partially frozen so the egg yolk and egg white super easily, then the yolks will be marinated in soy and the freezing helps them keep they’re shape as they cure

I live in Japan, and their chickens are just raised differently.
It’s safe to eat the eggs raw as well. Raw egg on rice is one of the most common breakfast foods here.
If you fully freeze an egg and then thaw it, the whites return to a slimy liquid but the yolk changes and will remain stiffened. So I bet that’s what they did here, it’s a good trick
