Eating crabs in Kep is a must, and of the various varieties available, the female blue horse crab is the most coveted as they usually contain crab roe. In Kep’s crab market, one can purchase freshly caught crabs for $5 a kilo (as of 2016) and have them cooked for about 50cents. They are delicious boiled, and best eaten on the spot with pepper, salt, and lime juice to fully appreciate the freshness of the crabs.
