This time, we visited Osu market in Nagoya, Japan to try Yabaton, a famous Nagoya-based franchise restaurant that serves dishes cooked in RED MISO (aka miso/hatcho miso), which is aged longer and has a deeper, saltier, and richer flavor than regular miso. Misokatsu is a STAPLE in Nagoya, so this place is a must-visit if you want to try something new!
