Don’t go to Takyama if you’re not ready to overdose on Wagyu because their local Wagyu hit her ha tastes just as good as coobe if not better. And it’s even cheaper. You have to try it three different ways here. Head down to the oldtown and you’ll find these shops serving beef niggity on prawn crackers. It just melts in your mouth. The second is the traditional steak. But the special thing here is that they char grill the meat and that brings such a nice smoky flavor to the buttery meat. But the absolute best way to enjoy hido beef that you won’t find anywhere else in Japan I actually found by accident. The original shop I wanted to go to was closed. But I stumbled into this cute shop run by an obasan and ojisan not even knowing what to order. So then comes out this wagyu cooked on a magnolia leaf that infuses a fragrant lemongrassy flavor.
