I was in Nasu a few years ago and it became an instant favorite — full of delicious food, friendly locals and the most breathtaking mountain views. Next time I’m in Tochigi I want to explore Sano too! 🤩

  3. I've seen udon noodles made with the bamboo but first time seeing ramen noodles made that way! As a left-handed person, I'm wondering if I could do the bamboo and noodle cutting with the opposite hand.

  10. Using a bamboo pole to knead dough is an old Chinese technique that is even hard to find in China nowadays. I believe there is a shop or two in Hong Kong, not sure about Taiwan and SE Asia. The noodles are supposed to have a texture different to noodles using other techniques.
