There are so many genres and sub-genres of ramen that can be defined by the region it originated, the ingredients, the style of cooking, the ingredients involved, the flavour, to name just a few, so it has become quite complicated to group ramen as more and more are invented! Classically, ramen is broadly defined in 4 categories, which can encompass most, though not all, styles of ramen you’ll find in Japan.
1. Shio (salt)
2. Shoyu (soy sauce)
3. Tonkotsu (cloudy pork bone broth)
4. Miso
