    I believe you’re referring to [sake kasu](https://en.wikipedia.org/wiki/Sake_kasu), the pressed lees left over from sake production. Sake kasu develops pink, red, yellow, and brown hues as it ages due to sugar and amino acid interactions. The white dots on its surface are crystallized amino acids, and it’s completely safe to eat. However, its flavor may intensify with aging.
