Hi all! I am desperately trying to figure out what kind of noodle this is. It's for a beef ramen recipe, but of course it's not the typical squiggly type of ramen noodle. It tastes AMAZING. Thank you!
Ramen comes in many shapes and sizes from thin to thick and from perfectly straight to squiggly.
It also comes in fresh, dry uncooked, and instant (dry cooked). Instant ramen can also be dehydrated by frying, and air dried.
This one looks to be an air dried instant noodle using semi-straight medium thick noodles.

Looks like udon to me.

They look simply like fresh(ish)/ air dried ramen noodles. Squiggly instant ramen noodles are fried for shelf stability.

The presentation of the noodles looks sus…like they were scraps or something. Anyway, if it’s that amazing, you should just get it from the same place since they may have a proprietary blend of ingredients.
