I tried asking the server but I couldn't catch his response, it sounded like "bodo" or "boudo." Neither of those got me anywhere when I searched, and I wasn't able to see it when I looked at common tsukemono. It was served as part of a trio of tsukemono alongside tonkatsu. Any help appreciated as I'd like to make it at home!
