My mom makes fried rice pretty regularly, and for really large portions, like leftovers after parties, she’d freeze the rest into individual portions. She also the does the same with wilting fruit like blueberries and strawberries, but at that point, we wait until it’s summer to use them in milkshakes.

from what i’m aware the bacteria that are in rice get heaviliy recuced by cooking but not obliterated.
And it proliferates again fast when outside the fridge, a little less in the fridge.
TLDR best consumed in 3 days

Rice frequently and so easily gets contaminated by Bacillus cereus, and holy fuck do you not want that level of food poisoning. We’re talking severe vomiting every hour for 24 hours, intensely painful stomach cramps, whatever you’re not vomiting up is being shat out violently, and basically you’re praying to any and all deities that may exist, even if you don’t believe in them, to take you out of your misery.
It’s a spore former and the spores germinate when exposed to high heat (as in… cooking).
Source: I’m a former food microbiologist that tested food for pathogens. I’ve done B. cereus testing. Also one of my trainers got B. cereus poisoning while we were on a training trip.
Practice proper food safety.
