Miyajima is home to Itsukushima Shrine, a World Heritage site. To the ferry terminal, about 45 minutes from Hiroshima Station or 1 hour by direct bus from Hiroshima Airport (reservation required) About 500 deer live on the island. The deer in town are very accustomed to people.

Miyajima is one of the sacred places of Shintoism and has been called the island of God since ancient times. Particularly famous is the Otorii Gate, which appears to float on the sea at high tide.

Today we were guided by Mr. Shigeru Mukuda, the toji (master brewer) of the second brewery. Mr. Mukuda is the youngest of Kamotsuru’s four chief brewers. In 2013, he won the first prize at the Japan Sake Brewing Technology Research Federation. Kamotsuru kindly provided us with the video of the sake brewing scene.

Reservations are required on weekdays, but you can visit without reservations on weekends. This brewery contributed to the postwar revival of junmai sake (only rice and koji). Saijo’s traditional sake brewing process is faithfully followed. You can compare several kinds of sake according to your taste. This phantom sake is the best…
