Ugo is located in the regional Akita Prefecture of Japan and is famous for its delicious Nishimonai soba noodles. This traditional noodle dish is created by hand-kneading a mixture of funori seaweed and buckwheat flour in order to give the noodles a rich flavour and chewy texture.
