San Tora serves one of the best, if not the best miso ramen in Tokyo. Descending from the legendary miso ramen shop Sumire, San Tora serves a Sapporo style miso ramen that has few equals in and around Tokyo. The probably only shop that can really compete in this style is the ramen shop Oshima in the East of Tokyo, which is also a Sumire disciple.

The ramen at San Tora is based on a rich pork broth with some dried fish elements, which are not really forward, but bring a lot of umami to the table. The broth is combined with in lard sautéed moyashi bean sprouts and miso, which really unlocks the flavors of the miso and is a key element to making a great miso ramen that does not just taste like miso shiru.

The fantastic miso soup is combined with the classic Sapporo style yellow, medium thick and curly noodles that are so iconic and perfectly match this type of soup. The noodles are an absolute joy to eat, so be aware that there are options on the menu to get extra noodles.

Topping wise, you get incredibly tender chashu, the aforementioned wok fried bean sprouts, a dollop of freshly grated ginger and some negi green onion. I can really recommend getting extra chashu, since it was really juicy and tender when I went, plus it complemented the soup exceptionally. The ginger adds a fantastic flavor changer mid meal. I like to hold off to add it into the soup until I am halfway into the bowl. You can also add an ajitama egg, which was alright, but nothing special in my opinion.

  1. Nice to get confirmation its a top miso shop in Tokyo. Is Sumire in Yokohama worth visiting or should I save the trip for the flagship shop in Sapporo?

  3. Added to my google maps for October 🤣 I think about Sumire and Junren in Sapporo all the dang time and I haven't been there in 4 years.
