72 hours? That's three days until the food "isn't safe"
many people don't like airplane food (probably due to high altitude affects our sense of smell), but I think they still taste pretty good 🤔
its depends upon airlines, not everyone.. remind that
I swear that airline food has, or at least I was led to believe it, caused stomach pain and or diarrhea. I rarely eat on planes because I don’t even fly annually and when we are going somewhere the flights usually are just under the length to warrant meals or the flight is at night when you’re not eating anyway. I don’t always get to sleep but it’s probably much easier for me than it seems to be for others.
Okay for food that is already cooked and not being cooked again you have 72 hours. For food that is being cooked, not heated but actually reaching 140F, the timer starts once it's cooked. It's why "expired" meat becomes chilli. Sausage is also a grand example. So if the stewards/attendants could be trusted to actually cook the meals it wouldn't be an issue for the cooked meals.
Salads are the problem.

I can assure you, I've been fed enough moldy salads on the plane to know, food safety standards are not a serious consideration.

I knew someone who worked making airplane meals and they never talked about having an air "shower". Nor did they have to cover their faces. This was almost 30 yrs ago though.
