The idea to this ramen shop came the owner during a dream on his birthday, in which he saw his father, who had previously passed away. During this dream, his father gave him advice on how to make ramen and then proceeded to make ramen together with his son. This ramen shop is the result of this dream, in which the owner tries to recreate the ramen he made with his father in his dream.
Dad’s Ramen does not have a fixed recipe. Rather, every day is a little bit different, but always with niboshi and other dried fish as a base. If you are not a fan of niboshi style ramen, maybe this shop should not be your first choice. If you are going for the main item, the dream ramen, then you can expect 2 very nice pieces of rare wagyu beef on top of your bowl, as well as some super tender pork belly. The noodles remind me very much of pasta, more than ramen, but I was assured that these are actually ramen noodles. But very al dente pasta kind of creates the right image.
