At 10:50 I noticed you picked up the curry dipped bread which you put on the tray (?) And continued eating it..
Sorry if I saw wrongly but you might wanna avoid eating anything placed on the tray..
Its common practice that cleaners dun really wash and dry the trays, its merely wiped using a semi dirty cloth to remove any obvious food stains before it gets reused again unlike the bowls and utencils..
Of course I dun really have evidence that all hawkers dun clean the trays, but honestly I've never seen any hawker that cleans it throughly enough for food to be placed on it directly and eaten..
Sorry if I'm wrong, but would really suggest you not to do that for the sake of your health

Ghib, not sure if you have been there before but you can try going to Bedok Marketplace.. Not the most traditional but they do have some interesting food there! And also Blk 216 Bedok North St 1 Market, but they close rather early so better to go in the morning for breakfast 🙂
The Toufu skin u said is actually fishmaw i think. also ghib i think there's a nicer chicken rice stall down at redhill market. You should also try the satay beehoon there as well. There's one very nice chicken rice stall near redhill market vicinity at ABC Brickwork as well.
