Nagashi-somen (flowing noodles) is a really fun way we eat chilled noodles in the summertime in Japan. It dates back to the late 1950s when farm workers would use bamboo and water trickling from the rocks to chill and eat the noodles during their breaks.

Soon after, a simplified version was invented called somen-nagashi (just reversing the words lol) where batches of noodles are placed in a round tub with a motor that flows them in circles.

Today, there are restaurants where you can enjoy either type of flowing noodles, but I’ve always wanted to make my own!
