We are in Mexico’s southernmost state of Chiapas, known for its magical landscapes, mountains, and canyons including Parque Nacional Cañón del Sumidero. This canyon stretches for about 8 miles long and rises up to about 1,000 meters (3,300 ft). We tour the canyon by speedboat and stop along the way to view the numerous species of birdlife and wildlife including, spider monkeys which are endangered. The canyon is impressive as its natural scenery is a unique blend of Norwegian Fjords, Arizona Grand Cayon, and the jungles of the Amazon.
Next, we visit Chiapa de Corzo, a small town done in Spanish style where we try the local cuisine. We try the Chiapas Roasted Pork, known as “Cochito al Horno”, as well as the mole negro. This city was the first place the Spanish arrived in Chiapas in 1528.
