Kifu No Sato Ryokan (季譜の里), in the Yunogo Onsen area of Mimasaka, Okayama (岡山県美作市), is one of the few Ryokans that still offers the opportunity to be served meals in one’s room – in this case, the Hiougi (Leopard Lily) (スイートルーム檜扇) Suite. The explanation of each course was done in Japanese, but I’ve done my best to try and also describe each offering in English. They are:
DISH 1 – Sakizuke:
Kaki Namasu (柿膾 – Dried Persimmon Salad) with Cucumber (きゅうり) & Kabura (カブラ – Japanese Turnip)
DISH 2:
Tai No Ushio Jidate to Shiraga Negi (鯛潮仕立てと白髪ネギ – Red Sea Bream Soup with White Hair Leek)
DISH 3 – Sashimi:
* Sawara (鰆 – Japanese Spanish Mackerel)
* Tai (鯛 – Red Sea Bream)
* Mongo Ika (紋甲烏賊 – Common Cuttlefish)
DISH 4:
* Saedo Mame to Shimeji No Goma Yodashi (三度豆と占地の胡麻よごし)
* Ika Masago Ae (烏賊真砂和え – Squid dressed with Spicy Cod Roe)
* Yamame Kanro Ni (山女魚甘露煮 – Yamame Trout)
* 合鴨ロース (Duck Loin)
* Hime Kuwai (姫慈姑 – Arrowhead Bulb)
DISH 5:
Yaki Zuwai-gani (焼きズワイガニ – Charcoal-grilled Snow Crab)
DISH 6:
* Okayama Wagyu Mini Steak (岡山牛ミニステーキ)
* Ebi & Mongo Ika (海老と紋甲烏賊 – Shrimp & Common Cuttlefish)
DISH 7 – Tempura:
* Kani Tsume (ズワイ蟹爪 – Snow Crab Claw)
* Shishito (青唐 – Shishito Pepper)
* Hiratake (平茸 – Oyster Mushroom)
* Renkon (蓮根 – Lotus Root)
DISH 8:
Kani Gohan (蟹御飯 – Crab Rice)
Fukusa Miso Jitate (袱紗味噌仕立て – Miso Soup)
Hakusai, Kyuri & Nagaimo Shisozuke Tsukemono (白菜, 胡瓜と長芋紫蘇漬け – Pickled Cabbage, Cucumber & Japanese Mountain Yam)
DISH 9 – Dessert:
* Kuromame Ice Cream (黒豆アイスクリーム – Black Bean Ice Cream)
* Kuri Tofu (栗豆富 – Chestnut Tofu)
* Nashi (梨 – Pear)
