Gento Imai (今井彦人), the owner/chef of Imayoshi Sushi is a 3rd generation sushi chef who is modernizing sushi omakase. His creative approach to making sushi keeps up with the growing need for Halal, vegetarian, and vegan sushi accommodations in Tokyo, while staying true to his family’s traditional sushi making techniques.
During this sushi omakase course (“omakase” meaning “I’ll leave it up to you”), Chef Gento Imai gives byFood host Shizuka Anderson a unique brown rice sushi experience. Imayoshi also specializes in sake and sushi pairings, and towards the end of the meal, Chef Imai brings out his stunning collection of jewel-like Edo kiriko sake cups!
