At China Poblano by chef José Andrés, we ordered the Viva China taco, with beef tendon and a Kumamoto oyster; the Silencio, a duck tongue and lychee taco; the Carnitas taco, full of succulent pork; and the Hongos, stuffed with mushrooms, guacamole and rajas. Plus, we got a Rou Jia Mo Street Sandwich (sweet Chinese roast pork in a flaky bun) and a Cucumber Gin Paleta.
