Steak the Way You Actually Want It β€” Kitan Hibiki, Osaka

In Japan, if you want a steak, you are usually choosing between two extremes.

On one end are the high end teppanyaki restaurants where the steak is part of a set course. Beautiful, elegant, but limited in choice.

On the other end are the family style steakhouses where the meat arrives on a hot cast iron plate and keeps cooking at the table, often past the point you want.

It is surprisingly hard to find a place where you can simply order the cut you want, in the size you want, with the sides you want, and enjoy the steak as the main character of the meal. Kitan Hibiki fills that gap.

This was a Manyo Gyu ribeye and striploin, beautifully marbled blocks. Grilled, sliced, portioned and plated right in front of us at the counter.

The best part is the choice. No need to commit to a full course. You choose the cut, choose the size, and watch it be prepared in front of you.
