Kyoto Kitchen, an award-winning Japanese restaurant based in Winchester’s Bridge Street, hosted this year’s cohort from the Exclusive Chefs Academy on Tuesday, December 2, for an immersive afternoon led by head chef Shintaro Ito.

The academy is one of the UK’s most competitive chef development programmes, with more than 200 applicants each year and only 13 chefs selected. This year’s group visited Kyoto Kitchen for an introduction to Japanese culinary techniques, culture, and philosophy.

During the session, Chef Ito delivered a series of live demonstrations focused on Kyoto-style cuisine. He showcased traditional techniques, knife skills, ingredient preparation, and the underlying philosophy of Japanese cooking.

Participants gained insight into the artistry and discipline that underpin every dish at Kyoto Kitchen.

The visit is part of the restaurant’s broader commitment to supporting culinary education and professional growth within the hospitality sector. The restaurant has a history of working with educational institutions and industry programmes to provide mentorship and hands-on learning opportunities.

The academy itself is designed to identify and develop rising stars in the culinary world and being selected for the programme is a significant achievement for any young chef.
