【1日1200個】美人親子が作る絶品のたこ焼きに常連が殺到!

1-7-41 Nyoiya, Minoh City, Osaka Prefecture. Takoyaki Hinata. Owner. The shop opened in April 2019, so this is its seventh year. I’ve always worked in food preparation—school lunches, you know. I did kindergarten school lunches, elementary school lunches, I worked in the food service industry, and I lost everything. After my divorce, I had to be both mom and dad. I worked really hard, but then I wrecked my body. I developed a hernia and couldn’t work anymore. Then I got cancer.
I had thyroid cancer, and they told me it might have metastasized. I had both the hernia and the cancer recurrence, and I couldn’t continue working in the cafeteria either. I tried going back once, but it didn’t work out. My back started hurting, and when I really thought about what to do next, When I was a kid, I always wanted to be a takoyaki vendor. I wanted it so badly in elementary school that when a takoyaki shop opened nearby, I told them in fourth grade, “I want to work part-time here.” I really want to do this. This twirling thing. I really love takoyaki. I love eating it, and I love watching it being cooked. So I thought, “That was my dream, right?” And I decided to try becoming a takoyaki vendor. But they were totally against it. My dad and mom, you know. Being a single mom and all, it’s unstable, Impossible! Absolutely impossible! they said, But some friends gave me a push, saying “You can do it!” When opening a shop, you can’t run it if you can’t make takoyaki, right? I trained by working part-time at both chain stores and independent shops. I absolutely love watching them become perfectly round. I flip them while thinking, “Get cute, get cute!” My love for takoyaki is incredibly deep. When someone buys it, I feel like I’m giving it away as a bride, saying “I’m so glad for you.” Ours are tricky to cook, you see. I’m not really fond of hard, powdery takoyaki, I dilute it with broth until it’s as thin as possible to flip it, and most people say it’s hard to cook. A kid who worked part-time at a takoyaki stand had a few chances to flip them, but when I told them to try it, they couldn’t do it. That’s how hard it is. Only family members can do it. Kind takoyaki made with a nutritionist’s certification, focused on what’s good for the body. Batter made without mix powder, using plenty of dashi and domestic wheat. Plenty of tempura flakes. Flip them over and shape them into perfect circles. Customers arrive as soon as it opens at 11:00. Purchased a set of yakisoba and takoyaki. (The shop) is mostly regulars. The food truck mostly gets first-timers, and the number increases with each event, Since events don’t happen that often, food trucks attract a lot of first-time customers. There are advantages to both brick-and-mortar shops and food trucks. The store has a cozy, homey feel with regulars, and you can get friendly and chat about things like “How was today?” With the food truck, it’s busy so you can’t really chat much, but you have all kinds of encounters. A customer visiting for the first time. Orders ponzu, sauce, plain, rock salt, and dashi soy sauce. Many orders come in, so additional takoyaki are cooked. Sauce. Dashi soy sauce. Mayonnaise. Top with bonito flakes and green seaweed to finish. A customer visiting for the first time after seeing TikTok. 12:00. Leaving the shop to his son, he prepares the food truck. His daughter joins the preparations. Loaded the ingredients and departed. Sennan Long Park, Sennan City, Osaka Prefecture. 14:00 Delivery. This day, they set up a stall at a dog event they’ve participated in before. Parent and child divided tasks to prepare the stall. The shop manager’s bonus piggy bank. He puts it in there. Preparations completed in no time. Since we had time to spare, we had them make takoyaki for us. Rich in broth, meltingly soft, with a simple, gentle flavor. The person from the neighboring food truck also bought some. The event started at 4:00 PM. Regulars quickly arrived with gifts. We don’t seem like parent and child, do we? People often say we seem more like friends. We talk about pretty much anything. I’m not really motherly, am I? Like teaching them what they shouldn’t do, or worrying when they come home late. It’s not neglect, but I let them be pretty free. Beyond that, we become each other’s confidants, sharing things like, “This happened,” or “When I was a mom, I did it this way.” A customer who came last time visits the shop. What’s good to eat if you’re microwaving something cold? No makeup. No makeup or rock salt. Dashi soy sauce soaks in too much, so maybe not? But it’s still tasty even if it soaks in. It’s tasty, but you can’t tell when it’s microwaved. Once it cools down, dashi soy sauce and plain are definitely the best. Ordered 3 packs of dashi soy sauce, 2 packs of rock salt, and 2 packs of plain. Last time in Sennan, they bought a huge amount too. I immediately recognize and greet customers who have visited before. That hairstyle is popular, you know? I’m sorry. Order for the “Hinata Set”: 6 takoyaki and yakisoba. The yakisoba is reheated from what was made earlier. When I lost everything, I had time to look back on myself, I thought, ‘I always wanted to run a takoyaki stand,’ so I opened the shop. Most shops have an opening rush that lasts about three months, and lots of people come, but around the sixth month, you hit the ice age. You endure that too, and around the first year, when you’ve got lots of regulars and things have stabilized, then COVID hits. COVID comes crashing in. Literally, no one walked past the shop anymore. People who always came by in the evening wouldn’t even stop anymore, Then the state of emergency was declared, and they said things like restaurants can’t operate, and you can’t serve alcohol, We followed all the rules and closed down. (Back then) it was an izakaya. When we had to go where the customers were, it was a food truck. I started running a food truck and doing TikTok livestreams, and now I do both. I wonder what language dogs’ inner thoughts are in. Huh? Probably no language, right? Nothing? Just barking? More people are visiting the event, and the food truck area is bustling. These days, you can’t make it work with just one stall. It’s tough. I wanted lots of people to try delicious takoyaki, so I experimented over and over, feeding it to my family almost every day, until I was sick of it. I tried dozens of places. Whenever I found a takoyaki stand, I made sure to buy some. And always plain ones. From around 5:30 PM, customers come nonstop. Continuously flipping takoyaki while swapping places in the cramped food truck. An unbroken line of customers waiting their turn. All 1,200 takoyaki are sold out. After nonstop cooking and selling out, they finally catch their breath. Clearing away menus and flags. Purchasing baby castella from another food truck. Cleaning the griddle. Checking inventory. Great work today! They sold out early, didn’t they? That’s right! It sold out around 8:00 PM. Great work today. It’s a simple flavor without any mix powder, and everyone who tries it says it’s totally different from other takoyaki places. People specifically request Hinata’s takoyaki, saying that once you try it, you truly can’t forget it… This place is seriously delicious, right? Even when we go to the food truck, they’ll happily wait in line for another hour. The line gets crazy long, but they say, “I want to take some home.” They wait 30 minutes, an hour, just because it was delicious. The most common things people say are “It’s totally different from other takoyaki” and “It was delicious.” People often ask at the food truck, “Where can I eat it next?” or “When will you be here next?” Regulars say they somehow crave it when they’re feeling rough, sick, or just not well. I guess it’s because we use ingredients that are good for you, so your body craves it. Eating it when you’re feeling down makes you feel better, so I want everyone to try it. 21:00 Cleanup complete.
