Today I am having breakfast at a Ryokan,traditional inn. A ryokan is a type of accommodation that has existed in Japan since ancient times, but is a type of accommodation that is different from a hotel. Specifically, breakfast and dinner are included, Japanese-style food is served, you sleep in a Japanese-style room, and there is a hot spring. At high-end ryokans, the hot spring is included in the room, which is a wonderful experience.Today's breakfast consisted of 20 different dishes, all centered around tofu. This inn was originally built by people who made tofu, and considering what I had eaten last night, the menu consisted mainly of tofu dishes, such as yudofu, mapo tofu, and soy milk fried tofu. Of course, there was also horse sashimi, steak, and other delicious seafood.Tofu is a traditional dish that has been eaten in Japan for a long time. The process of solidifying soy milk extracted from soybeans with bittern requires a lot of patience, but the resulting product is very delicious.Kyoto is famous for yuba, but in fact, delicious tofu is made in various regions.
