This was one of my favourite dishes in Japan — super simple but incredibly tasty.
We had it at an izakaya called Kakureya in Nishi-Shinjuku, and on the menu it was listed as 鶏皮ニンニク正油 (chicken skin with garlic and soy sauce?).

I’d love to try making it at home now.
