So I'm planning on making Katsu Curry soon, and I found this recipe, however in this one she makes hers with chuncks of vegetables, while I would like mine smooth, (doesn't have to be completely smooth, can be "grainy" just not with big noticable chuncks) is there a special way to do this or do you just blend it?

unless you want to be nursing a pot of curry for hours until the potatoes and carrots become like absolute mush i would recommend just using an immersion blender
honestly, that would be way too thick if you took standard curry and blended it. IMO just make the curry without meat or veg if you really just want a plain smooth curry
You don’t add any veg and just make a plain curry sauce. Don’t blend it wtf lol
