You’re pretty much working against time, and you’re almost guaranteed to mess up your first batch. Making daifuku (mochi stuffed with anko makes it more complicated than it is.
I kinda gave up making it at home. I can buy it at a grocery store close to home. If I want a home-made rice treat, gohei mochi is way easier and delicious. If I want a smiliar chewy texture to mochi, dango is super easy to make at home and you can try different toppings (sweet soy sauce, kinako, ground black sesame with sugar, etc).
