I found a block of tuna belly at the Japanese grocery store and couldn’t resist taking it home. Definitely thinking nigiri and sashimi but does anyone have any other ideas?

    Edit to add: does anyone know of a good tutorial on cutting this for sashimi? I’m so afraid of butchering this!

    Sushi first … But any leftover scraps you could mince then use as a topping over some sliced toasted shokupan. Like a Japanese bruschetta.
