Fish paste made from sardines and anchovies.

Eels sorted by size, put in baskets, then slimed cleaned off. Deboned, then mass cooked.

Grill internal organs, dip in sauce, grill again.

Poke holes on skin to release natural oils. Salt & Sake. Steam then grill bottom.

I cannot believe that Kaya a Japanese lady is so disrespectful in regards to chopsticks. In Japanese culture the only time you can grab something pass something whith each others chopsticks is after a body is dead and you are passing there remaining bones arround after cremation. This is very frowned upon and disrespectful. Kaya should have definitely corrected you on this sunny when you tried to do it.
